Cheesecake Help Needed-Tale Of Woe

Good Morning CC! I'm in a bit of a bind here. icon_confused.gif I am rapidly recovering from a nocturnal bout of food poisoning and before I fell ill, I managed to mix and bake a chocolate cheesecake for a holiday party this evening. Just as I was falling ill, I heard the timer go off on the oven and I THOUGHT I turned the oven off when I turned the timer off. Sadly, I did not and although I had turned the oven down, it was on until 6:00a.m. icon_cry.gif My husband brought the chocolate hockey puck in for me to see as I was trying to get out of bed. icon_eek.gif I have now just placed the second cheesecake in the oven and the timer will sound about 10:45. I placed a pan of water in the oven beneath the cake and need to leave the house by 11:00. If I remove the cake without letting it sit and place it directly in the refrigerator, will it crack? I have to leave for the party at 5:00, and wanted the cake to chill, but can I prevent it from cracking? Thanks for your help!

Sorry this happened to you! I'm doing a cheesecake as I type this! Yes, it wil probably crack because of the rapid temp change. Will you be back before you have to go to the party at 5?

I'll be back around 2:00. Do you think that will be enough time to chill if I leave it in the oven?

Could you put it in the freezer?

The freezer should be fine to chill it quickly. I used to own a deli and made cheesecakes all the time. I would make up extra and put them in the freezer to have when needed. It didn't affect the taste or texture at all.

Hi,
Not to long ago there was a post about cheesecake and water bath and that sort of topic. I placed a post that I had used the bake even strips soaked in water around my springform pan and NO CRACK!! Yes, even if I had the cheesecake completely baked I would not take it directly from the hot oven to the freezer. I agree that maybe when you return home around 2, place it in the freezer then. After your cake is fully baked, you leave yours in the oven to cool? I usually take mine out to room temp. to cool, then to the refrigerator. Hmmmm learn something every time I log on to this site!!! Great!!!
