Dear CC Friends - I would like to do some cupcakes with some cream fillings and am wondering how I would go about filling the cupcakes. Do i wait until they are cooled and "tort" them and then fill with the filling? Do i make a hole in the center of the cupcake, pipe in the filling and then cover the hole with icing? Please - can anyone tell me?
I let the cupcakes cool, then take a decorating bag with a large tip, possibly a 12 or so, stick the tip into the cupcake and fill with filling. You can do this in three places if wanted. Just be sure not to put too much or the cupcake will start to buldge or the filling will come out. HTH!!
You absolutely need to be sure your cupcake is cool or the filling will begin to melt and get yucky! Then just fill a piping bag with whatever filling you are going to use. They make a bismarck tip which is almost like a long tube, but you can also successfully use tip 10 or 12. (10 is a little longer than 12 so works well) Just push the tip into the center top of the cupcake and give a light squeeze. You may have to 'explode' a few to figure out how much filling to use!! In other words, I like to explode one so that I HAVE to eat it! Hahaha! I like lots of filling in mine. I posted a recipe in the recipe section for a really good filling that is like hostess, but better!! Good luck!
