Bubbles In Icing

Ok. The first time I made icing it was with a hand mixer. icon_rolleyes.gif Yeah, I know. My instructor could tell by looking at it that I used a hand mixer. So I got a stand mixer. KA - very nice. I STILL get bubbles! What am I doing wrong? Because its driving me CRAZY!!! icon_cry.gif

Not sure what recipe you're using but it sounds like your beating the icing for too long..

I use the crisco/powdered sugar recipe. Thanks for the tip - I'll have to try to cut down on my timing. thumbs_up.gif

Use the paddle and not to fast and not to long.

It must be the time, because I use the paddle, and if it went any slower it would be still. icon_lol.gif

I was having this problem also. What helped for me was to make the icing and then stir it by hand a couple times. It broke up most of the air bubbles.

Make it about a day ahead of time. Right before you use it, stir it with a spatula or wooden spoon. I have found that if it sits for a day, it is much easier to eliminate the air bubbles.

Perhaps instead of the instructor dissing your mixer--she should be giving you helpful hints on removing the air bubbles. JMO!

icon_razz.gif Good thinking! She wasn't the best instructor, but she was cheap, so I couldn't complain!

Another thing I forgot to say. No matter how slowly I mix the icing, it ALWAYS has air bubbles in it.

If there are some left after stiring it by hand--if you "hot knife" it, they will dissappear.
