Hi everyone,

Okay - I've made the fruit cake, bought the marzipan and white icing in the ready-to-roll packages, have bought a red ribbon and poinsettia decoration for the top. I want to pipe white cornelli lace over the four corners of the cake around the poinsettier. My questions are:

1) For the cake to be ready on Christmas day, when is the earliest date that I can start icing it?
2) Do you have to let the marzipan dry before putting on the white icing? (Note that it's the roll-type)
3) What is the best icing to use for the cornelli edges?

I'm terrified.
But I promise to post a picture of it once done!

For the cornelli lace corners, I'd suggest royal icing made with meringue powder or pasteurized egg whites:

You can start icing now as fruit cake keeps.
It is recommended to let the marzipan dry for a day or 2 before icing.
Use a little cooled boiled water to stick the icing to the marzipan.
use royal icing to pipe the corneli lace.

Most important don't forget to post a picture of your finished cake so we can all admire it
