Well maybe she is forgein or somebody in her family is. Like I am and when I first time in my life saw how cakes are cut here in US I was like icon_eek.gificon_eek.gificon_eek.gificon_eek.gif . The style kind of demage the look of piece of cake. If u know what I mean. Now I already use to it. But if I will go to my home (Czech) and cut cake like that, ppl will really look strange. So maybe she is like that.
U can cut sheet to wedges, somebody already sent u pics above. From 8 inch i can do 24 wedges. Style whole cake on half, halfs on halfs, quarters on half and that half on three pcs... sorry dont know how to explain it better.
If I would you, just give her options how ppl above give you and let her decide, just have it ready so u dont freak out, when shwe will be there.

Lidunka I hope we didn't insult you or hurt your feelings by us "freaking out" about her "weird" request. But as you've stated we are used to that here in the states. There is always room for change and welcoming of new things icon_wink.gif I'm up for a new challenge and I think I'll cut my next sheet into wedges just to try it out icon_smile.gif

OhMyGoodies icon_biggrin.gificon_biggrin.gificon_biggrin.gif oh i am ok, I just wanted explain why the wedges. Or I tryed to understand her. Personaly...more cake she use, more money for baker thumbs_up.gifthumbs_up.gif If she is willing to pay it.
And that u though it is freaky, well to me looked the squares on first time freaky too icon_biggrin.gificon_biggrin.gificon_biggrin.gif . Maybe good for me that I know to use both ways.
But the thing is if she will have let say forgein hosts, like I was for first time.... U know what i mean. But anyway its not important.
Just for sure in Czech Republic are cakes cut on wedges, in Germany too though...and maybe more European states. So who knows.
But for sure I am completaly ok, u just made me laugh icon_biggrin.gificon_biggrin.gificon_biggrin.gif

Oh and another thing was wierd for me in US. SHEET cake. In Czech we bake on sheets just chickens, or meat loaf and stuff like that. Maximaly mom make homemade peach cake in sheets because its bigger and kids are like animals and eat it in 2 seconds. icon_biggrin.gificon_biggrin.gif

If I already told her my sheet cake price, I don't think it would be ethical to go back on it and charge more.

Maybe I should just tell her I can't do this. This is stressing me out already and it hasn't even been 24 hours. Just to do sheet cakes doesn't seem worth it.

Didn't you get the memo? Of course they do, it is like grilled cheese, they taste better when they are cut diagonally then they do straight across! (sorry could resist, running joke in the family)

I originally quoted her $300, but it was over the phone, I was flustered because of the 8" is more expensive than sheets" and I didn't consider that a wedge would take up more cake. I based it on 24 servings per cake. I normally charge $25 for an 8" round, $2.25/wedding serving. After I realized the quote mistake I called and left a message that my numbers were off and we could either discuss when she comes over tomorrow or she could call tonight. I'm expecting a call any time now.

I'm thinking I could offer $18/8" round (2.25x8 servings) or she can go with the sheet cakes, which would come to the original quote total anyway. I also figured in another $25 for the tiered cake (8" plus stacking materials, 6"free)

Does that sound fair and right?

Ok, I just got a call from the MOB about the pricing.

She was discussing with the Bride that the chocolate & ganache won't be as obvious for layers. So now they want 1/2 the servings to be wedge cut/red velvet and the other 1/2 of the servings to be ganache/sheet cake squares. That does free up some of the work and they are getting a little of both. I'm happy with that because it upped my profit, and lowered the amount of baking I'll need to do.

Thank you everyone for your help in this issue. I have learned my lesson and will stick to my prices.

I'm still learning how much things are and what I can charge. I'm fairly new to decorating and want exposure without scaring people away with my prices. I figured $2.25 a serving, 8 servings per 8" round. I use box cakes, so my cost there is less.

Where am I off?

An 8" round serves 24, not 8.

My pricing is based on the serving chart, NOT on how many pieces they are going to cut out of it.

you can cut 24 wedge servings out of an 8" round. here is a diagram by KimAZ (this is a 10- but for the sake of example). http://www.cakecentral.com/modules.php?name=gallery&file=displayimage&pid=623593 the outer wedges wont be as pointy on one side, but this is the traditional way of cutting round tiers anyhow.

i think that indydebi pointed this out earlier, that possibly why she may want the wedges is because she originally asked for sheet cakes right? sheet cakes are often cheaper right? so if you "fake" out your guests with wedges from a sheet cake, they may think they are from a big grand round wedding cake display. in her eyes, the best of both. cheap sheet cakes but her guests dont think she's cheap.

i dont think thats great logic, just trying to see where she is coming from.
