Kind of long..sorry

10 years ago, my step daughter asked me to make her wedding cake. I had to laugh, yet feel flattered, since she was only 13 at the time.

This summer she became engaged and again asked me to make her wedding cake. I have sooooo many ideas that I would love to do, but I'm not sure it's practical.

There will be about 250 people, colors are plum and mint green. She requested chocolate, chocolate and more chocolate!

My ideas are tiers with chocolate MMF, lace overlays. Perhaps chocolate mousse filling and whipper gnache.

A delimia is that the venue is about 300 miles away and I have to transport this bad boy. I will make the cakes and decorations ahead of time. Freeze cakes with crumb coat on. Wrap in plastic, go up a day ahead of time and finish in the motel room doing all assembly at the venue.

I need ideas for all of this. The fillings will make this more apt to slide apart and I am scared of this happening. I would like some suggestions for flowers and decoration ideas with her colors in the scheme, keeping in mind of the chocolate MMF.

any suggestions owuld be really appreciated. TIA!!!

P.S. The wedding is in July so heat and humidity is a huge factor!
