Royal icing is what I use for cut out cookies. Once it dries, the cookies can be stacked.

3 Tbsp. powdered egg whites
1 lb. powdered sugar
1/3 to 1/2 cup water
dash salt
1/4 tsp. clear vanilla

In large mixer bowl, slowly mix powdered egg whites and powdered sugar. Add water until the batch is just moistened (you can add more water later to thin it). Also add the salt and vanilla. Beat on high for 3 minutes. Store in a glass bowl with plastic wrap directly on the frosting, then cover the bowl with more plastic wrap, and if you have a lid for the bowl, put that on it.

Color and water can be added to small amounts for decorating your cookies. I usually mix mine in a coffee cup. Using the plastic decorating bags really helps to prevent drying, and a rubber band at the top keeps the icing in the bag and also prevents drying.

I use fondant cut it with the cookie cutter and put it on the cookies while still hot and it sticks cool then decorate. We have 50 doz orders to do and need a way to make them quickly and they taste really good with the fondant.
