Best Suggestions For Taking Preorders For Christmas.

I have a website and I'd like to be able to let my customers know that they can order for xmas but to let me know in advance. Like by a set date. How should I word this on my website. Help please.
Also I would like to know: occasionally I cannot provide any orders. I don't want to tell people no when they contact me so again, how should I let them know on my website that during these such and such dates I cannot provide them with any orders. Without offending anyone I would still want them to come back. Help Please. Thank you so much I am new at this business thing and just want to know how to word things properly.
You can put a banner at the top of your site stating to order early to ensure their Christmas goodies are available.
Also, you can put the dates you are unavailable - maybe on a calendar that marks the dates you can provide goods - those dates you are not just mark "booked" or something.
I think if you put it on the site people may either plan around the dates or know right off the bat that being aware of dates is really important.
