Hi, Does anyone know why Royal Icing cracks when it is drying out.

I can't say I've ever noticed this....I've dried royal icing roses without cracking. But I've never done snowflakes or tiaras, so maybe that makes a difference.

But I guess the most direct answer to your question is: no. Sorry!

This can happen when you over beat the icing. It in corporates too much air into the icing. After beating let the icing set for several hours. Then spatula stir it before using. I have found that helps if I accedently over beat the icing. Try this next time.

Also be careful not to beat in too much air when you stir it to use...more of a smooth blending motion so as to not incorporate more air into it. I have to do this as I seem to beat it too much often. icon_redface.gif
