Cake Balls Question???

I tried making cake balls and either totally messed them up or I just don't like them. I am sure I probably just didnt do something right. I made a cake just for them and used some store bought icing (premade). They were kind of squishy.....did I use too much icing?, does the cake need to be dryer?, do scraps work better? Can someone explain what the final product needs to look like before you roll them up.....and then what next. I am hoping that it was just a fluke and the next batch will turn out.

You are definitely NOT alone!

The first batch I made was with BC icing and they did not turn out well. I was so unhappy....everybody else was raving about them and I was a little more than disappointed! I tried again....then tweaked a few things the third time....

now I am officially hooked on cake truffles (sorry, that just sounds better! icon_rolleyes.gif ).

Do NOT...and I repeat...do NOT give up on these! You'll be glad you didn't! thumbs_up.gif

I made them for the first time this week, too. I used evaporated milk as my binder. I add a little at a time, just until it would clump together when I squeezed it in my hand...they weren't wet enough for me to "ball" them between my hands. They would crumble apart when I tried. However, I scooped them out with a scooper and popped them in the fridge for about 1.5 hours and I was then able to ball them in my palms and dip them.

I wasn't crazy about them at first bite...however they grew on me quickly when I woke up in the middle of the night and ate 6 of them. icon_smile.gif Try them again.

My first batch turned out a bit squishy also. I used the dairy creamers and think I used too much. I made a batch the other night and let them sit in the fridge over night. They turned out awesome! Be very stingy with your liquid additive. The dough was almost sticky as I rolled it into balls.

The key ( I think) is to add a bit at a time and work it through untill you get the desired consistency. It should be about the consistency of chocolate chip cookie dough without the chocolate chips (unless you want C Chips icon_biggrin.gif ) Then I use an icecream scoop to make the balls ( I make large ones) then refridgerate them for an hour or so so they firm up. Try not to totally freez them though. I havn't tried the BC with them though, I like the coffee creamer. HTH

I made cake balls (I like the name cake truffles better, too- it better describes them) tonight and was wondering how long they would keep in the fridge in an air tight container? Think they'll hold until Christmas?
