Filling For A Sheet Cake

can anyone give me tips on putting raspberry filling on this sheet cake? I will get a level and use that to slice it in half but how can I keep the layers from breaking? icon_rolleyes.gif

I use a flat cookie sheet. works every time.

I find that difficult as well, I have only chosen to do two layers of sheet cakes and filled them that way. It makes for a nice tall sheet cake and much easier than torting a sheet cake.
I will watch for tips on torting a sheet cake without breaking it. icon_confused.gif

I torte my sheet cakes with the Wilton gadget -- basically a long wire attached to a handle. It works well and gives you even layers. I slip a thin/flat metal board in between the cake to remove the top layer. It's the same as using a cookie sheet except that my metal board is alot thinner so it's easier to shove under the top layer.
