OK, I just put my 2nd cake in the oven because my first one fell apart.
I am attempting to make a 11x15x2 inch sheet cake, when I went to get it out of the pan, it fell apart. Sooooooo I made a batch of the miracle release and tried again., My questions are, how long should I wait before attempting to release cake from pan, and how long will my batch of miracle release last. Oh by the way, it is 12:30am here in KY. I'm pooped!!!! lol

Well, I don't know anything about 'miracle release' but I know that I've always been told that you let it sit in the pan for 10-15 minutes and then put your cooling grid on top of the pan and flip it onto the cooling grid...

exactly 10 minutes. set your timer icon_smile.gif should pop out like a charm.

For bigger cakes, I wait longer than 10 minutes... depends on the density of the cake. Sometimes I wait about 20 minutes before I flip a butter cake. For sheet cakes, I always line the pan with parchment paper... guarantees a clean flip every time.

i guess it's too late for the parchment paper, but I will try it the next time. I am waiting for the cake to get done.

I agree with hktaitai. Believe me I've been there too, we just learn by error- THAT SUCKS!!!! icon_cry.gif especially when you are tired.

The times that my cakes have fallen apart during flipping are when I prematurely flip them. Be patient. I usually feel the sides/bottom of the pan. If it's way too hot to the touch, it's too early to flip.

Hong Kong!! that is awesome. hey cynda, my daughter lives right outside of Dallas. Cederhill Tx. icon_eek.gif I am addicted also. I want to try so many of the recipes but now I have a chance to make the cake balls because of the cake disaster earlier this evening. Ha

I line with parchment for some of my more fragile recipes and I wait five minutes, run a knife along edges, get a cooling rack and put it on top of the pan and flip the cake onto the cooling rack. Works like a charm. good Luck

BTW I am waaaaaay addicted too!

Did it come out clean? What I do is run a paring knife around the edge of the pan several times to make sure it's not sticking to the sides.

OK guys this is the kentucky group huh... well heres another Kentuckian. South central here.
Now you guys are talking about being addicted but tired.... I've worked 51 hrs this week have to work sat. night, just got home, have a Tres Leches cake to do this morning and where am I sitting in front of a pc lol now tell me WHOS ADDICTED

You asked how long the cake release will last...it will keep for a good long time, months, in fact! One neat thing about it is that you can make as much or as little as you think you will need for a period of time. I don't use much, so only mix 1/4 cup of flour, crisco and oil at a time.

The 11 x 15's are so hard for me to handle (arthritis and carpel tunnel) that I started to make two 9 x 13's instead and putting them together for the larger cake.
