How Many Days In Advance Can I Start Baking?

I have rented a booth at the Expo center for next weekend. It will be Fri. Sat. and Sun. icon_lol.gif

This is exciting but very scary.

We can go on Thurs. and set up.

I am making cakes, cookies, cupcakes, bars, fudge, peppermint bark, some pies, and candied pecans.

How many days ahead can I start baking for everything to be fresh and moist. I will start selling Fri. morning.

I am not sure if I should just decorate my booth on Thurs. and not bring any food until Fri. morning.

Which of these desserts should i start baking first?

Cookies,pies, cakes, cupcakes, candied pecans,bars first maybe bake Tuesday. Frost Wed. , peppermint bark, Wed, Fudge-Thursday.
