if these are the small individual I would do a 3" pan maybe even a 4". They are very time consuming. I take less time with an 8" than I do with those little things.

If you want to go to the work of icing raw sides of the baked cake you can bake in a 2" deep sheet cake pan and cut circles with a 3" round cutter, fill and stack two layers just as for a regular layer cake.

I was thinking that may be you could use poured fondant, like a bigger version of petit fours.

Are you doing stacked mini cakes or just a one tier?

I do a 4", 3" and 2". When I do single tiers I do 4". If I have a huge order for them..I use the Jumbo muffin pan (4inch).
Regular Muffin Pan (3 inch)
and Mini Muffin Pan for (2inch).

Just make your cakes in the muffin pans, with no liners, bake them flat (or cut the top off). And flip tthem over and ice, decorate.

I have some mini wedding favors in my photos... I made sheet cakes and used a 3.5" biscuit cutter and iced them to be 4" and put them in a 5" square box....

HTH!

Tracy and everyone -

How tall are the tiers on your mini-cakes?

tmriga -

I have the Magic Line 4x2. 3x2 and 2x2. But when I use the muffin tins - they are the depth of the muffin pan. So the ones I have are 2 - 4inches deep. I just stack one of each muffin sizes on top. I have split and filled them too, which makes them taller.
