This is my first post. I have enjoyed all the info everyone shares on this sight!! It really is addictive.
I need help with cookie icing. I've done cakes for 15 years but now I would like to try cookies and cookie bouquets. My problem is I live in South Florida and the humidty here is a pain. All the icings I've tried takes forever to dry or they don't dry at all. Can anyone give me some sugestions?

Welcome aboard! I just moved to NC from FL and I know about my experiences with cookies. Is your icing recipe contains butter? I know some icing contains butter and it's a biggest culprit. Butter contains grease and don't hold humidity too well. Find a recipe that don't includes butter. Royal icing is best. Here's what I did:
Prepare royal icing with pure confectioners' sugar, add less liquid and add 1 extra teaspoon of meringue powder to the recipe.
I've tried it before and it worked (icing harden, doesn't smear, etc).

Thanks for your help. My recipe does have butter in it. I will try the royal icing. I've used royal icing to make cake folwers and it hardens like cement. Will it do the same on cookies? Can you eat them?

HI! I also live in Florida, Orlando, to be more exact. I've used regular royal icing and also Antonia74 royal icing with no problems. The icing actually dries quicker than I thought.

I live in VA...yes, it dries hard on the cookies, but it is a nice compliment to the cookie. The softness of the cookies and the hardness of the icing are a nice mesh...give it a dry, I think you will like it, and it is so much fun to decorate the cookies with!
