Ok so usually the bride is the one that is in charge of the cakes. In this case the groom in charge. He is a really good friend of mine. He has gone along with everything the bride wants. He has put his foot down on the cakes....well his cake at least. He does not like chocolate. First words out of his mouth was no german chocolate cake. I make a better than sex cake topped with fruit. He chose that but that was a year ago. I spoke to him a few weeks ago he said you know I really want an armadillo *sp cake. You know like in the movie "Steal Magnolias" red velvet and all. Does anybody have any suggestions as to how to make and armadillo cake? TIA

Movie chick........I think the armadillo cakes are so cool looking.......only thing that concerns me is the red velvet cake part! Isn't red velvet cake basically a "chocolate" cake with red food coloring????? i thought he didn't like chocolate cake???? Maybe he'd be more interested in white cake died red or another flavor??

Your right KHalstead. Thats what the armadillo cake was in the movie Red Velvet -chocolate........can't see why white would not work......

But then on the other hand it could be any flavor he wanted - right?

In order to get that deep shade of red, the chocolate is really they best choice.

I tried explaining that to the groom he said just do what ever as long as it is red. I think its more the german chocolate that he didnt really like. As long as it is red and an armadillo he doesnt care. I was thinking I could make and armadillo then put it on top of a sheet cake. The bride just called me to tell me that they had gotten back all the RSVP's and behold I am in for lots of baking. They sent out 400 invits and got back RSVP's from just about everyone. Here's an example of one Yes number of adults 10 and 5 children. They have counted and recount and are coming up with 750 people. Ok so when I told the groom these cakes would be a gift we were counting on oh 400 to 500. Ok now the count is 750!!! plus I have to drive 7 1/2 hours to this wedding. I would not do this for anyone but he is like a brother to me. So now Im taking suggestions on the entire wedding cake...anyone????

Kitchen cakes! Make sheet cakes for the extras, if you already have your design. Cut those first, leaving the designed cake uncut as long as possible.
