Question About Torting, Filling And Covering With Fondant

Usually when I'm making a cake I bake one day, torte fill and crumb coat the next, and cover with fondant the third.

But I have a cake coming up where I won't have that third day.

My question is, do I need that time to let the cake settle with the filling before I put the fondant on?

My timeline will be that I have to bake Wednesday and then I'll be out of town until Friday and the cake is due Saturday. I usually like to leave only last minute stuff to do on Saturday.

Can I roll out the fondant and keep it covered so that it keeps its pliability?

Gumpaste decor so I can do those way in advance anyway.

Or would I be better off to torte, fill and crumb coat on Friday and just get up early and do the fondant? Cake doesn't have to be delivered until 3:30.

As long as you do not overfill the filling you should not have to wait for settling. I torted, filled, and frosted to cakes this morning. The way I fill is to "dig" out a shallow area inside the cake, leaving a 1/4 to 1/2 inch rim. Put filling is dug out area and make sure the top of the filling is level with the rim. Put top cake on and do your crumb coat. You can do the fondant immediately after this too as it will only help to keep your cake very moist. If you can't do this all at once then I would suggest your statement;

It doesn't take long for a cake to settle after it's torted. I usually tort and put back into the fridge for about 1/2 hour and have not had a problem with bulging. This is not with fondant, though, so if you left the cake for an hour, it should be fine to cover with fondant, I'd think.

I always put a buttercream dam in also, and I haven't had much problem with cakes settling much, I just want to be sure. I could torte and fill and crumb coat and then refrigerate it for an hour or so and then put the fondant on.
