Our church just compiled a cookbook and this recipe was submitted by a friend of mine.
Grandma Quinns Marshmallows
2 c. granulated sugar
1 c. light Karo corn syrup, divided
3/4 c. hot water
2 Tbsp. gelatin, dissolved in 1/2 cup water
2 tsp. vanilla
Cook sugar, 1/2 cup Karo, and hot water to 240 degrees. Put other 1/2 cup Karo in a mixing bowl. Slowly pour in hot sugar mixture. Add gelatin 1 teaspoon at a time and beat until fluffy. Add vanilla. Beat until very thick and it clings to the beaters, not stringy. (Use wire whisk beaters.) Pour onto pan or dish lined with wax paper. Let stand 24 hours. Turn upside down onto wax paper sprinkled with powdered sugar. Wet waxed paper with water and peel off. Cut with wet scissors. Dip in chocolate or powdered sugar. Keep in airtight container.
Martha Stewart has a great marshmallow recipe and it's shaped like a snowflake - pretty neat for your hot cocoa! You can use this recipe for any other type of marshmallow:
