How Long Can You Really Keep Royal Icing?

I've had some royal icing(Wilton recipe) sitting in some sealed containers for probably 2 months. I went to stir them up and there is some liquid on the very bottom and the top is very thick. It looks fine, I just need to add some more liquid to get the consistency right. Is it still good? I'm making some sugar cookies and will use it if it is still good.

I'd like to know too since I have some that is nearly a month and I'd still like to use it in a few days or so. It is sealed with wrap and then in an airtight container.

mmm... I heard you can/should keep it for a couple of weeks only, but you know, I'm better off bumping you hoping someone with more experience can help!

2 months? was it frozen or refrigerated? I would say toss it if it wasn't in the freezer. I'm a better safe than food poisoning kind of gal.

But there is really nothing that could go bad if you think about it. Might be easier to toss it. Maybe pm antonia74.

What you found is just the natural separation of the royal icing after storage. After about 4 or 5 days in a container, 3 very distinct layers of the icing start to appear. When you go to reuse it, you'll notice soft/fluffy/foamy icing on the top, thin/liquid/runny icing in the middle and thicker/denser icing on the bottom.

Don't worry, it's really just good old gravity at work! Scrap the entire container into your mixing bowl, attach the paddle and give it a good 8-10 minutes again. You may find that it is runnier than before you stored it away, just add a few tablespoons of icing sugar again, or thin it as required.

I keep royal icing (made with meringue powder) for up to a month at room temperature. thumbs_up.gif

Thanks so much--I don;t have to pitch this leftover batch--I signed up to do sooo many cookies soon--teacher gifts, cookie exchange(6dozen!!), church social, and possibly 8 cookie bouquets(which I have never done, but thinking I will be fine doing them). I am going to have to be signed up for a straight jacket afterwards!!!

oh then I decide to do a family platter at the pottery place for dh's sis and a fleece throw for his nephew. My family stopped giving gifts year ago. So why am I doing stuff that will make dh look good? hmmmmmmmmmmm...........because I am insane! icon_smile.gif

make sure you remix it. I did mine for 5-8mins this time around--wasn't a huge batch. I had some leftover in a disposable deco back and thought I couldjust knead it and all. I thought that until my cookies started to slide off each other. I then remixed the other in the bowl and sure enough it was sooooo much better. I did not have add any sugar--it was the right consistency I needed.
