Omg, so many recipes I don't even know where to start...

White Chocolate Eggnog Mousse Cake??

Lemon Lust cake?

Caramel Cream filling?

zillions of others...

Delightful!! I think I have a new favorite, if any of them turn out half as good as they look and sound!

Who is the author on that book? I have one copy of The Cake Bible by Rose Levy Berenbaum that I also got from http://shop.cakecentral.com. It's so abused! The binding is atrocious, pages are now loose, and there are many, many stains almost everywhere (egg white, some chocolate, a little butter, ...... and what the heck is THAT icon_eek.gif ?) icon_lol.gificon_lol.gif

Enjoy your book. I love finding a new favorite and when it's been so loved and used to the point where it's falling apart, you know you've got a winner there!

The Cake Book is on my Amazon wish list! If it's really that good I guess I'll have to buy it. I also belong to the Good Cook, so maybe it's cheaper there. I'm always looking for new cake recipes and those that you mentioned sound awesome!

Ooh I may have to buy myself a Christmas present! Seriously I always end up using the same recipes it seems - or enhancing a cake mix.... ooh I wonder if the cake mix doctor is at that place too! Maybe I can get both icon_smile.gif I'd love to try out some new recipes though.... gotta get a scale first so I can measure my ingredients accurately - I think that must be so important b/c most of my scratch cakes have come out a little dry and I have a feeling it might be the amount of each ingredient.

wait what's w/ the membership? Do you have to purchase two more books during the year or do you have to do that AND they charge you a monthly fee or something? I don't get it. Wish they had more book titles too.....

Since I'm here, and I'm bored (uh...), I'll post the condensed version of the caramel cream recipe. Makes about 3 cups and needs 2 hours of chilling, so plan accordingly.

3/4 c. sugar
3 TB water
1/4 ts lemon juice
1-1/4 c. heavy cream, divided
3/4 c. mascarpone cheese
1 ts vanilla

In small saucepan combine sugar, water and lemon juice. Cook over medium heat, stirring constantly, until sugar dissolves. Increase to high and cook without stirring, brushing down sides of pan occasionally with a wet pastry rush, until syrup caramelizes and turns golden amber, about 4 min.

Remove pan from heat and add 1/2 c. of the cream (mixture will bubble up, so be careful), stir until smooth. Pour hot caramel into a heatproof glass measuring cup and loosely cover with plastic wrap, chill about 2 hours.

In a mixer with a whisk attachment, beat the remaining 3/4 c. cream and the mascarpone cheese and vanilla at medium until blended. Add chilled caramel and beat at high until the mixture forms soft peaks. Use immediately or cover and refrigerate.

OMG this sounds SO good icon_eek.gif Picture this with the creme brulee CoffeeMate cake...or so many others...

yes, that DOES sound yummy ... mmmmmmmmmm ....

now, where can I find a local source for mascarpone cheese? not a big italian contingent here ... local stores aren't into the "shi-shi-foo-foo" cheeses ... may have to take a road trip ... yummmm ...
