I made my own MMF but don't have KA so I had to do it by hand. How do you keep it from being so messy and not get 3rd degree burns. I REALLY prefer MMF but it was too dry b/c I kept needing powdered sugar to roll it out or else it would stick to everything. Advice would be appreciated!!!

Okay, here's how I do it that might work.

First, spray a plastic bowl with pan spray. Add mm, no water. Melt, stirring often. Add in colorings if coloring a whole batch, and flavorings if you want at this stage. Stir in powdered sugar until the whole glob stops sticking to the bowl.

Next, dump it out onto a bit more sugar. It won't be as hot or sticky. After it's almost not stick, start rolling on Crisco.

No burns! I use a big wodden spoon, and it works for me.

I was afraid I would break any spoon I used. Will try MMF again! Tastes sooo much better.


Is it supposed to be a little harder to roll out than Wilton fondant or was it just mine being too dry???

I've never used Wilton, only mmf. I don't use nearly a full bag, so mine is pretty elastic instead of dry. I don't add water to it either, but that's personal preference to lessen the sugar needed. Is your house cold? That could make a difference as well. It should be just past sticky, and roll with Crisco instead of sugar.

I just recently tried the real MMF and not the Easy. I used a giant glass mixing bowl to melt the marshmallows. I just ran the microwave for 3 minutes on high and stopped in at about 2 minutes to stir. At 3 minutes, there are still a few lumps of marshmallows but they melt in when I stir it. I do use my KA for the first half of the powdered sugar and then knead in the last two cups or so. I put it right back in the marshmallow bag and then in a baggie. I do like the recipe and let it rest overnight. So far I have just covered cookies with it, but I really like working with it. The last batch I used a tsp. of Wilton butter flavor and it really tastes good too.

dynee-- Those cookies are great! HOW'D YA DO THAT?!?!?

I have done NFSC with MMF before and used my cookie cutter on it and then placed it on the cookie, but that doesn't look like what you did.

When I do my mmf I melt the marshmallows with a few tbs of water in the bowl that is greased with crisco. Microwave for 2 minutes, stir out the lumps slowly so you don't get too many air bubbles. Then I add my flavoring and sift sugar in untill the mass forms a loose ball. Then I put a mound of powdered sugar on my rolling mat and dump the sugar in. I sift a little sugar on top and start folding the mass onto itself untill it doesn't stick to my finger when I poke it in the middle. It is still a loose ball, and still sticky when handled for any period of time. I grease up a piece of plastic wrap and transfer to the plastic and wrap it up tight. Then let it sit overnight. The next day I knead it with greased hands and add a little more sugar if needed. I think the problem most people have is they keep adding sugar right away before letting it rest. The resting period really does make a difference and keeps your mmf from turning out like a brick! Give it time, people! icon_smile.gificon_smile.gif

I got a set of snowflake cookie cutters from Brylanehome.com. This set has three flake cutters and two different shape hole cutters. I baked the cookies with the holes in them, then cut the MMF and duplicated the holes that are in the cookies and attached that with thinned apricot/apple jelly. While the fondant was soft, I pressed in some dimension especially on the smallest ones that don't have room for much for a hole. and left them out overnight. I brushed on water and sprinkled with Wilton White Sparkling Sugar sprinkles. It is really easy and fun.

Have you tried the MMF recipe using MM Fluff. It's soooooo easy, and you don't have to mess with melting mm- it's cheap- and it comes out really white. I love it!

I have tried the "Easy" MMF but really like the regular better especially if made in the microwave. It seems fulffier or something and I could never get the easy to dry.

something that i have found after working with mmf is that if you use cornstarch to roll it out that it dosent get dry and stiff like it does when rolled with conf sugar. i also add about a tbls of crisco to my marshmallows while im melting them along with using crisco to coat the bowl.
