ok im new to this cake sstuff......someone wants me to make a 1/2 sheet layer cake.....in other words BIG......with plain white buttercream and thomas coloring page picture on it.......i plan to use a box and tweak it a bit wiht butter and milk and i will pipe gel the design onto the cake.......i live in florida....Jax to be exact....how much do y ou think i should charge for this?

You do not specify what size you consider a 1/2 sheet cake so I will give you my breakdown per serving.

I use a serving size of 1"x2"x4". I am using the 4" tall piece of cake for this example because you stated a layer cake. So I am assuming you are talking about using 2 -2" layers for this cake.

My base price with only buttercream icing is $2/serving. (I consider a 12x18 a half sheet so that would be 108 servings so the price would be $216)

However I would not do the Thomas the train on it because it is a copyrighted image.

i guess my 1/2 sheet would be 2 of the smallest sheet cakes at walmart/publix etc..........

i did not think of charging per serving because i know that ppl just cut depending on the person........

Charging per serving is just a pre-determined serving size on which to base your pricing. At KFC, they have determined that 3 chicken strips is a serving so that's what you get in each chicken strips meal. If you want more chickenm you have to order AND PAY FOR more chicken.

Same with cake. I have a predetermined serving size that says a double 12x18 will serve 108 people. If they decide they want to cut them bigger, they are welcome to. If that means they need more cake, then they need to order AND PAY FOR more cake.

If you have a flat price per cake, be prepared because the first thing they are going to ask you is "how many people does that serve?" so you might as well do it right to start with.

This is also a great example of why I (and many others on here) refuse to use the terms "half" or "whole" sheet cake, because everyone calls it something different. Someone orders a 1/2 sheet from me and I ask them how many people they need to serve, then I tell THEM how big a cake they are looking for. When I ask how many people, I get answers ranging from 15 to 75, so NOBODY knows the sizes ... they are just using the lingo without knowing what the heck they're talking about.
