Need Help With Flavor Combo-Banana Bread Cake With What Fros

I'm going to make a cake tonight--banana bread cake (just a banana bread recipe baked in 3-8 inch pans). I need a filling and a frosting, but am having trouble finding one because it's for DH and he:

-doesn't like buttercream or IMBC or SMBC (icon_surprised.gificon_confused.gif)
-doesn't like anything very sweet at all (hence the banana bread "cake")
-doesn't like caramel


I was thinking about some kind of whipped cream lightly flavored with maple syrup, but I am not sure how to do that, or if the maple would go well with the banana bread...I took my inspiration from putting butter and honey on warm banana bread??

Does anyone have any suggestions for something light, non-greasy and not very sweet at all that I can make? I do not need to be able to decorate with it, that would be asking way too much icon_razz.gif

So, if you have any suggestions for a frosting flavor and/or recipe suggestion, I would be appreciative of your help thumbs_up.gif

A cream cheese icing would be delicious, and the cream cheese would help cut the sweetness in the icing.

Mmmm, I second that. I LOVE banana cake with cream cheese icing.

The first thing that came to my mind is a chocolate frosting...maybe a semi-sweet ganache...

It might be too sweet for your husband's taste but if you live anywhere near a Toojay's deli, they have a Banana Dream cake with chocolate topping and walnuts. It's soooo delicious...I highly recommend it if you are ever in the FL area.

I think a cream cheese filling would be great (maybe a few chopped nuts in there to add a little something extra)...but cream cheese icing/filling is pretty sweet to me so just use it as a filling. You don't HAVE to ice the entire cake. My hubby loves my pumpkin bread cake and I put a cream cheese filling and then right before I serve the individual pieces I drizzle honey over it. Super delish and not too sweet at all!

I have a recipe for toffee cream filling that is delicious. It's a whipped cream base and uses toffee pieces. If he doesn't like caramel, he may not like toffee but it sure is good paired with banana cake!

peardream, thanks for the suggestion, that sounds awesome, I think I'll make one for me like that next time, yum! But I think it would be too sweet for my DH.

What do you guys think about this:
Use the cream cheese frosting suggested by vdrsolo, TubbsCookies, and amoos for a filling and ckkerber's whipped cream based filling as the frosting for the top of the cake, substituting walnuts for the toffee pieces?


Thanks for all of your suggestions! I really appreciate it! DH is pretty difficult to bake for since he doesn't have much of a sweet tooth!! (I wish I could follow his lead! Then I wouldn't have to work out everyday during my lunch hour! icon_rolleyes.gificon_wink.gif )

This recipe was posted on another site by someone named SugahSugah:

Toffee Cream Filling

2 tablespoons dark rum
1 teaspoon unflavored gelatin
1 cup heavy whipping cream
3 tablespoons confectioners' sugar
10 tablespoons crushed English toffee candy


Pour 2 tablespoons rum into small heavy saucepan and sprinkle gelatin over. Let stand until gelatin softens, about 10 minutes. Stir over low heat just until gelatin dissolves, then remove from heat. In a large bowl, beat chilled whipping cream and 3 tablespoons powdered sugar until stiff peaks form. Beat in gelatin mixture. Fold in English toffee pieces.

I would make a chocolate whipped cream frosting - just add a little cocoa powder to whipping cream while whipping and you can control the sweet with how much sugar you add.

Adding a little instant coffee or expresso powder with chocolate would be yummy too! Cake and coffee all in one bite.

Thanks everyone! I went with a modified whipped cream filling with honey and walnuts. I just used a packet of gelatin stabilizer, fresh cream, 2 tbs of honey and coursely chopped walnuts. It turned out a lot tastier than I had hoped.

ckkerber and dinas27, I think I am going to combine your fillings for a chocolate toffee cake next weekend alternating your filling ideas each layer. YUMM!
