I need a real egg royal icing recipe. I have been told this is a sturdier recipe and better for harder results, or more sturdy results anyway. Anyone have one they could share? icon_biggrin.gif

Try this:

2 egg whites
4 cups powdered sugar (approximately)

Beat egg whites until slightly foamy, add powdered sugar; beat until just combined. Then beat on high for 3 minutes. If it's too stiff, add water in very small amounts (1/2 to 1 tsp. at a time).

I use the same recipe as Michele. For some reason people think to work with royal icing the finished product has to be so stiff that your hands shake and your wrists hurt when piping it. It doesn't have to be, it can be fluffy and still make beautiful piping, and it dries just as hard and solid.

I use 3 egg whites, 1/8 tsp cream of tarter and 1 pound of powdered sugar. I just beat it all together until it's the right consistency, somewhat stiff but not so much that it's hard to pipe, and thin as needed with water.
