I just made a sheet cake in which I torted and filled it with chocolate hazelnut icing. I had to be so careful removing the top layer so I could put the filling in. I was wondering how do you remove the top layer without it breaking into millions of little cake pieces. I had a little tearing, but I was able to put it together again. I used a cardboard cake holder to slide my top layer off. Then I torted, and added the layer back on by gently pushing it over the cardboard. There must be a easier way. I am attaching my cake, because I am so proud of it.

Great question. I also use a cake board or one of my air bake cookie sheets. I am also curious how others torte larger cakes.

I've found that throwing the cakes in the freezer for about 15 minutes is enough to keep it from breaking. I'd still recommend using a cake board or something to slide under it just for extra support.

I can do 12" with just my bare hands using this method.
