I finally ordered Sweetex and am using it for the first time for my daughter's wedding cake on Fri. Anything I should know before I attempt the icing.

Do I use the same ratio of powdered sugar and flavorings as with Crisco?

Anything to be aware of??? TIA for all your knowlege.

I use about 1/4 less Sweetex than whatever the recipe calls for in crisco. ei: 1 cup crisco is now 3/4 cup sweetex. I LOVE sweetex and will never go back to crisco again!! I just hope the gov't. doesn't insist that the hi-ratio shortenings go trans-fat free or I'm sunk!! icon_mad.gif

I use a little less of the Sweetex also, I've used the same too, either way is fine. I love the texture and it' s so much easier to smooth. The flavorings are the same, I don't do any of that different. Let us know what you think? I leave it beat forever too and no air bubbles, that's why I quit with the Crisco. I got so many air bubbles it was ridiculous. Enjoy!!!!!

Icing made with Sweetex is definitly my favorite!! I agree with christeena
and debster about using less. My recipe calls for 1 cup of Crisco and I use 3/4 cup of Sweetex. You'll never go back to Crisco again!

I use 1 cup of Sweetex to about 2 pounds of powdered sugar.

We have it at a wholesale store here -- "Cash & Carry" or you can try Internet. Some high-end grocery store BAKERY dept. might sell you a 4-5 lb. tub if you don't wish to purchase a 50-lb sized bucket.

How many batches of icing should I make for a four tiered wedding cake?

What size cakes are you using? I used two batches of Buttercream Dream for a 6" 8" 10" cake. I use an icing tip, so I tend to use a little more than with a spatula.
