how and what do they wrap the cakes to make the outside wrap taller than the cake.

they might be different

looks like they are wrapped in sheets of chocolate to me. just measure your chocolate to be a bit taller than the cake.

It looks like chocolate wraps . . . you can melt chocolate onto acetate paper and wrap it around your cakes. That would be my guess.

those cakes are covered with chocolate.
Im going to do a couse in the new year where they show u how to make a "sleeve" with choc and then put that around a cake. I imagine that will look the same

yep its chok, layered on acetate and then wrapped around the cake when it is set enough to hold its shape but not enough to break. they would have placed the dots in the top pic first befor adding the chok to the acetate, does this make sence??. and the other one would have been a long piece of acetate, i guess help was at hand to hold the chok wrap for the second..
