i have to ice and cover a cake with fondant this weekend.
whats the best way to retian moistness in the cake?
should i cover the cake with plastic before it cools? or does this make it soggy?
should i freeze the cake and then ice it before it thaws? or should i let it thaw out completely? should it be covered during the thawing?
when should i put the fondant on?
ive done all this before but i dont know if theres a right way to do and if so im not aware and would love to get tips form everyone here! ![]()

I wrap my cakes in plastic before its complety cooled, I then either freeze, if I dont need it for the next day, or else it just goes into the fridge. I then let the cake thaw before decorating.
I've only once tried to ice a frozen cake and will never try that again. The fondant became sticky and I battled to get the accent pieces on
. It might be because I did the crumbcoat in bc and then stuck it back in the freezer, someone else may be able to shed light on that!
after I've baked I let it cool, then wrap in greaseproof paper (parchment) then put in an airtight container.
Next day (or later that day) I will cover with fondant and that seals in the moistness. I will never leave more than 24hours before icing as the sooner you can ice it, the fresher it will be.
I've never freeze my cakes but I know a lot do and say that works as well.
Oh and never put a fondant iced cake in an airtight container, use a box otherwise it will sweat and the fondant will stay too soft.
