Does anyone know of a good Pina Colda cake recipe and filling. Growing up this lady used to make this cake and we absolutley loved it, but I don;t believe she is in my area to find out how. I just made one using the Loraaine Oils, it was good but I thought it tasted a little fake. I am looking for that freshly made taste not the Pina Colada Mixes you mix with alchohol.

Here's my recipe, i only made it one layer, no filling, but I suppose you could fill it with crushed Pineapple with bc

Pina Colada Cake from scratch

2 cups flour
1 tsp. Baking soda
1 tsp baking powder
½ cup veg oil
¾ cup buttermilk
3 eggs
3 tsp vanillasugar (or 1 tsp extract)
3 tbsp dark rum
1 cup sugar
½ can draines crushed pineapple
½ cup coconut

Preheat oven to 160 C
Whist together wet ingredients, in separate bowl mix dry ingredients together, put them together and mix well, pour into prepared pan and bake till done. Might have to cover top if it starts getting a bit dark.
