Jet-Puffed = Sticky Mmf????

I swear I've had the hardest time making a consistently good batch of MMF.

I thought I had finally mastered my recipe, and then I bought Jet Puffed MMs at Wal Mart because they were sold out of their great value brand.

In the microwave they puffed higher. Stirring them was sorta rubbery. Adding the powdered sugar was fine but even though the MMF seemed to be the right consistency it was super sticky. I ended up using the whole bag (2 lbs) of PS plus extra, and still sticky. I went ahead and labored through trying to roll it out and get it on my cake, but what a gawd-awful mess! I will be covering every inch of that tier in decor!!

This is the second time I used Jet Puffed. The first time I did notice it was much softer than normal but I only used it to make balls (a ton of bubbles on a rubber ducky cake) so it wasn't an issue. But this time I'm swearing off of Jet Puffed!

Has anyone else had an issue with Jet Puffed or could it be something else I did? With this last batch I did forget to add water until the MMs had already been in the micro for 30 secs, but I wouldn't think that would make a difference...

I have a few bags left, but I think those will be used for hot cocoa icon_rolleyes.gif

Interesting...I didn't think brands would matter. Marshmallows are marshmallows, right? I use Kroger brand myself, so I have no idea. I mix it up in the KA with the dough hook attachment, dust my table with powdered sugar, and go to town! I know a lot of people dust with cornstarch, but I think it makes the fondant taste funny, and the powdered sugar dusting helps me with the sticky issue.

Yep! It's really weird. I just finished making a batch with the Great Value brand for another tier and it came out perfect.

There must something to the reason why they call it "Jet-Puffed" since it does rise really high in the micro and when you stir it it's rubbery -- I can't explain it -- but it's definately not the "soup" I get with other MMs icon_confused.gif

Quick question - are the bags the same size/weight? I get mixed results with different brands and whether or not they are mini mm or regular ones but the common denominator with my problems were that the size/weight of the bags was different.

Jet Puff MM do come in a 16 oz and a (I think) a 12 oz. I have picked up the wrong size before so that may be the problem. I always use Jet Puff brand and sometimes I have to had a bit more Powdered Sugar but normally not. I always let my MMF set for a few hours and mostly overnight. It is way too soft to work with right after I make it.

I've had the same problem. I only get great results when i use Wal-Mart Great value MM's

Actually jet puffed are the best to use since they are made from pure cane sugar and not beet sugar. The trouble could be that not all the bags are a pound some are 12 or 10 oz. so you might not have got the right bag. After makinf mmf you should crisco it wrap it tight and let it sit overnight in the fridge. Much better consistency the next day. HTH

Hmmm. The bags are each 16 oz. I always get flawless MMF with GV brand and they are likely made with cane sugar, too, since their PS is cane sugar.

The first batch I made for the bubbles sat for 3 days, but since I still have 5 bags of Jet-Puffed I'll try it again with extra PS.
