Someone here on CC recommended a book to me (On Food and Cooking by Harold McGee). When I got the book in the mail I thought - "ugh...I slept through science class/lab - this is going to be way too technical and detailed" - well, I was pleasantly suprised.

What an amazing book and so easy to read. I recommend this book to anyone who wants to understand what is going on when they are mixing, heating, chilling, etc... anything that is edible. I was especially interested in Chpt 10 (Doughs) and Chpt 12 (confectionary). After reading this book I look at baking/cooking in a whole new way! I also hope this knowledge will help me to be more creative in recipes.

Thanks, snowshoe.....I often wondered what changing the ratio of ingredients does to a cake....
