Would any of you lovely fellow ccers have a recipie for a diabetic cake and icing?

I made a ckae w/ splenda once and it was a BRICK. I am not exaggerating when I say I could've thrown that 9X13 through a wall and the cake would've stayed INTACT.

This is for the pastor at my family's church and any help would be greatly appreciated. Thank you in advance!

Sorry i only use the Sweet n Low cake mix box. It really isnt bad. my cakes come out just as hard. And for the frosting, i use the sugarfree white chocolate pudding mix and coolwhip. Good luck

I would also love some new ideas here. I have to make a cake next month for my family and I have a cousin with diabetes.
I look forward to some ideas tooicon_smile.gif
