Here is one of my favorites, as Vegan Chik'n patties / nuggets are EXPENSIVE.... (posted this in the "garden burger" thread)
Un-Chicken Filet (or nuggets)
1 lb firm tofu, drained & crumbled
1/4 cup wheat germ
1/4 cup flour (any)
2 Tbsp nutritional yeast (found at health food store- has cheesy flavor)
1/2 tsp garlic powder/salt
1/2 tsp poultry seasoning
1/4 tsp pepper
1+ Tbsp veg oil
Mix ingredients, except oil. Use hands to mix and form into 4 - 6 burgers. (optional: dredge in extra flour if want them crispy) Oil pan and brown each side w/bay leaf under each patty (med/high heat)
** ALSO: if making nuggets, just make smaller patties.
This recipe can be adapted by changing spices. Sometimes I use sage or fresh basil leaves instead of poultry seasoning.... the possibilities are endless.

Chocolate Bliss Pecan Pie
1 pie crust
1 pkg (8 squares) semi-sweet baking chocolate, divided
2 Tbsp butter
3 eggs, slightly beaten
1/4 cup brown sugar
1 cup corn syrup
1 tsp vanilla
1 1/2 cups pecan halves (or you can use walnuts)
Coarsley chop 4 squares of the chocolate; set aside. Line a 9 inch pie plate with crust.
Microwave remaining 4 squares of chocolate and butter in large microwave bowl on high 1-2 minutes or until butter is melted. Stir until chocolate is completely melted.
Brush bottom of pie crust with small amount of beaten eggs. Stir remaining eggs, sugar, corn syrup, and vanilla into chocolate mixture until well blended. Stir in nuts and chopped chocolate. Pour into pie crust.
Bake at 350 for 55 minutes or until knife inserted 2 inches from edge comes out clean. Cool on wire rack.
WARNING: This cake is soooo good, but soooo rich! Cut in small pieces ![]()
