My 1st topsy turvy cake for a girls 21st birthday.
This is my third decorated cake and first tiered cake..

Here is what I planned on achieving more or less, but...

The middle layer colapsed, it just fell apart... I baked another one (limited recources so first layer was white, 2nd was chocolate had one already and third was white cake again...
Tried to fix it with dowels and everything I colud think of doing.. so the pic look terrible icon_redface.gificon_rolleyes.gif (but I can't just show everything that comes out right!) hehe icon_cool.gif

(and I couldnt get to resize it I was planning on making it really small since its so icon_eek.gif )

Then here is one where I just started the crumb coat, what a mess!!

Still goto move it of the newspaper where I was doing finishing touches..

And here I'm finished... and it seems to miss a layer, I wonder where that is? icon_rolleyes.gif

Now I don't know who was more upset about all this me or my mom!
You should have seen the kitchen!!

If you have any advice on why my middle cakes layer fell apart pls help.., The top ones side where I had the hole cut in just fell off... icon_cry.gif

I think the cake looks beautiful, I LOVE THE COLORS!!!!!!
Did you put a cardboard on the bottom of the middle layer, that is really important. And was your fondant really heavy. And did you put a dowel thru the top of the whole cake!

The finished product is very cute! If somebody hadn't seen the picture of what you wanted to acheive, they would NEVER know! My thought is that your cake is very moist with a fine crumb...it tastes FANTASTIC, but doesn't hold well when carved. When I carve anything at all, I want a dense cake...the WASC is REALLY good for carving, even a chocolate version, which is what my frog prince cake was made out of.

If you want a scratch cake to carve, definitely go with a pound cake. If made correctly, they are wonderfully moist and delicious, yet very dense so they are great to carve and shape. I think you had really good luck with the other two layers-the center may have been off just enough to make the "lip" crumble.

Don't be discouraged-I know you can do this-the other layers were fantastic!!

It was a very moist cake!
I did have a cardboard at the bottom with dowels, but not one right threw as I remove the third layer and it wasnt needed with the two (it was standing strong)

I would like to know where to find the recipe WASC that everyone refers to as being a good cake. I did not see it in the recipes-did I overlook or is there another name?

sorry for all the frustration you had, but it really is a BEAUTIFUL cake! I would be honored if tha were my cake! Keep trying... you obviously have the talent.

I'm sorry you had a rough experience, but I LOVE your final product. I just saved it into my favorites and have it on my list of ones I'd like to try SOON. I'm terrified of a 3 layered cake, have only done two layers and this is inspiring me to want to finally try a topsy turvey cake - 2 layers.
