where do you buy those roll even strips for fondant or cookies?

are you talking about the bands to put on your rolling pin?

I've seen a small set at Michaels made by wilton. I think they only had one height in the package for about the same price as the site above. (not including shipping or those glorious 40% off coupons of course).

no the ones on the cookie tutorial on this website. The long strips you put on each side of your silpat and roll out the dough.
