My daughter told a friend that I bake cakes for special occasions and she told my daughter that she would like me to bake a cake for her daughters' Quinceanero in February2007 and I said yes. I was just informed that she would like a caramel and strawberry filling (something which I have never heard of) does anyone have a recipe for one or both that I can combine through trial and error before the day? The young lady is firm in the filling idea.

thanks in advance

maybe she wants the caramel and strawberry in alternating teirs. strawberry preserves are a good strawberry filling. not sure about the caramel. i alway use an icing from a company in drew ms called the caramel factory, but i'm sure you can find a great recipe on here!

I would ask her where she has previously had that combination of filling. If it's from a retail bakery, maybe you can get a sample from them for yourself to try.
If it's 'just an idea' from her, firm or not, I would make a caramel and a strawberry, mix them together and send her a sample now. That way, there will be ample time for her to choose another in case she changes her mind.

Who knows...maybe it's a just a bright idea on her part. I get all kinds of crazy combination requests that they think would be great, but I know don't have general appeal. I've had carrot cake with raisins and nuts with pineapple filling. People either love or hate raisins and nuts and pineapple filling is another take it or leave it. Another was banana cake with peanut butter and chocolate mousse. Too different too appeal to that many people.

When in doubt..sample!

1- with layer of caramel and strawberry
2- with tier of caramel and one of strawberry

Might want to make mini-cakes by cutting/stacking a small cake layer, or cupcakes with those fillings for sampling....

A lot of extra work and expense for you to make full size cakes just for her to taste.

JMHO

P.S. Please, please, please let us know what you think of the fillings icon_smile.gif
