I would like to make a carrot cake for a friends birthday at work tomorrow, but do not want to use cream cheese frosting b/c it will be out during the day. I don't have access to the cheesecake flavoring for the icing, does anyone know of another flavor I could use for the icing? The lorann oil I do have is vanilla butternut, but I don't think it would taste that great on it. Do any of you have any suggestions?

Thanks

What about putting some pumpkin pie spice into buttercream icing?

Or you could use the Pumpkin Spice Creamer from CoffeMate. I used that on a spice cake, and I am sure it would complement carrot cake also!!
