How Do I Carve A Cake?

From what I understand buttercream icing must be used along with a frozen cake to avoid many cake crumbs but I'm a little nervous about doing this. Anyone who could share any info on this topic, it would be much appreciated. Thanks!

for carving you need to make your cake more the consistancy of pound cake. You can freeze you cake, but you do not need to. Put on thin crumb coat of BC and let that crust over then go back and ice your cake.

I do a lot of sculpture and love to help people with it if they want help. You can look on my website for some examples, and PM me with the specifics of your project if you like.

I don't freeze my cake when I sculpt it but a lot of people do, and that's good, there are many different roads to the same place. I also pipe my icing onto the cake with a basketweave tip used as a tiny icer tip, to prevent crumbs in the icing.

I do a lot of sculpted cakes too and I do freeze mine. I carve them frozen with no BC, then I cover and let them sit overnight. The next night I ice with BC and/or fondant. I do the same thing as Deanna, and use a large basketweave tip to put the icing on.
