Pineapple Flavoring???? Help!

I need to make a Pina Colada cake tomorrow that calls for Pineapple flavoring. No store in town (small town) has pineapple flavoring or extract. Is there any way to make my own?

I can't drive to another town to shop because the closest option is 80 miles away, I wouldn't make enough money on the cake to pay for gas!

You're already using pineapple juice for the liquid, so I don't know what else you could use....

The recipe doesn't call for sugar, so you can't substitute lemon jello...

It's only 1/2 tsp. flavoring, so it might not even be that big a deal. icon_smile.gif

Here's my recipe. You don't need any artificial flavouring for it

Pina Colada Cake from scratch

2 cups flour
1 tsp. Baking soda
1 tsp baking powder
½ cup veg oil
¾ cup buttermilk
3 eggs
3 tsp vanillasugar (or 1 tsp extract)
3 tbsp dark rum
1 cup sugar
½ can drained crushed pineapple
½ cup coconut

Preheat oven to 160 C
Whisk together wet ingredients, in separate bowl mix dry ingredients together, put them together and mix well, pour into prepared pan and bake till done. Might have to cover top if it starts getting a bit dark
