SatinIce (all 1 word) is one of the more popular brands of ready-to-use rolled fondant on the market. It is the only brand I use.

IT IS MADE WITH REAL WHITE CHOCOLATE AND DOES NOT GET HARD LIKE REGULAR FONDANT . IT STAYS SEMI FIRM . IT IS ALSO A DREAM TO USE AND YOU USE LESS THAN YOU WOULD WITH SATIN ICE! I really like using satinice as well. The only problem I have had was when I purchased their chocolate fondant from my local cake supply store and when I got it home, IT WAS MOLDED!! Of course I needed it for a cake the next day, so I spent 30 minutes getting the white fondant tinted the right color of brown. Apparently the chocolate doesn't keep as well as the white...

WOW ...I HAVE NEVER HAD THAT HAPPEN TO ME . IT MUST HAVE BEEN REALLY OLD OR HAD IT IN A VERY HUMID PLACE FOR A TIME. EITHER WAY NOT GOOD. TOO BAD . IVE KEPT MY LEFT OVER WHITE CHOCOLATE FONDANT FOR MONTHS AND NEVER HAD IT GET MOLDY? HARD YES BUT NOT MOLDY. WELL STILL BETTER TASTING THAN THE REGULAR FONDANT DEFINATLY.

I use satin ice too, mostly because I can get it at a local bakery supply store for $50 per 20 lb bucket. I've also bought chocolate there and it was totally fine and I still have some months later that is useable.
I am curious about the flavor of the caljava white choc. fondant though, or FondX...

Caljava's is just great. It is similar to Choco-Pan. I know Linda Shonk does sell through them also. Check out the upcoming classes there too.
