Opinions Needed On Stacking A 12X18, Please

I will be making two sheetcakes, for 100 servings each. I will be using 2 12x18s put together. I have TWO of these to make, and I feel these will be huge!
Why cant I move away from the norm a little and just stack them. They would be easier to carry and my thaught is that they will look nicer than a single layer, 2 foot long huge cake, and will look better decorated than trying to decorate such a large area.
If I do decide to stack the two layers, would I need to support with a seperator or dowels?
Please help me with your opinions and thaughts, this is my first paid cake for a major corporation.

I see your idea. Think about the overall theme of the cake. Will a stacked cake work for the end result. I'm stacking a 1/2 sheet cake for a wedding this weekend and a double layer looks real nice. I personally don't use supports in my sheet cakes. Maybe someone else does. Good luck with the project and let use know how it goes.

I have made several cakes that are (2) 12" x 18" stacked. I do not use dowels because it's the same principle as stacking (2) 16" rounds. Be sure to use a good support base as this cake is very heavy.
Once you make a cake like that you'll make many more. The thought of it can be hard to comprehend but once you see it I think you'll like it. ![]()
I have to do the same thing this week as well. I am making a dummy cake for a wedding and sheet cakes for serving. So if I make 2 double layer 12x18 sheet cakes will that be enough for 150 people? That would be sooooo much easier than the 5 individual torted sheet cakes I was planning on making.
Since they don't need any decorations on them it would make it a breeze, plus I will be able to have a filling and not torte them, which I was concerned about having to fill 5 cakes, this way I need less filling and less frosting.
The Wilton Party Serving chart (not Wedding Serving) says a 2 layer 12x18 cake will feed 56 people. Should I make 3 double layer 12x18 cakes? Or 2 double layer 12x18 and 1 double layer 10x10 or 12x12? Help! I don't want to have a ton of leftover cake.
I am also in the wedding so I need this all done by Thursday morning so I can deliver that day - the wedding is on Friday.
SweetResults ~ I would definitley go that route. The slices will look more like a wedding cake since they would be 2-layered rather than a single sheetcake layer.
Here's the math for a 12" x 18" 2 layer (4" high) based on the wedding serving of a 1" x 2" slice:
12 / 1 = 12
18 / 2 = 9
9 x 12 = 108
Total wedding size servings = 108
Here's the math if she wants to serve the larger party size slice of 1 1/2" x 2":
12 / 1.5 = 8
18 / 2 = 9
8 x 9 = 72
Total party size servings = 72
Will she be serving food at the reception or just cake? If just cake then she might consider the party serving. If food then she might consider a wedding serving.
I'll work on some figures for the 11" x 15" pan and let you know what I come up with.
Okay ~ here's the figures for an 11" x 15":
15 / 1 = 15
11 / 2 = 5.5
15 x 5.5 = 82.5
Total wedding size servings = 82 1/2
15 / 1.5 = 10
11 / 2 = 5.5
10 x 5.5 = 55
Total party size servings = 55

Okay - this is how crazy I am. I am folding a piece of paper right now to visualize a 1.5"x2"x4" slice of cake!!
I think I definitly have to go with the party size slices since this will be THE desert at the wedding, I think with ice cream on the side, not sure about that.
I will be SO CLOSE with the 2 double layer 12x18
We will be short 6 slices! I am double checking to make sure the number is really 150, it may be a bit less.
The dummy cake is stacked gifts. I was going to make a small real cake gift on the dummy cake for them to cut that would only serve the two of them. Now I am wondering if I can modify it so that it will serve 8 people. Then they can cut their cake for themselves and then cut and serve it to her parents, and his parents (plus step-parents) that makes 8 people. The 2 12x18 will serve 144, total of 152 slices.
Am I cutting it too close? Maybe just worth it to make an extra 10x10 cake with the sheet cakes?

That's a unique idea to have the small gift cake real for the bride and groom plus serve it to their parents. Do they know for sure that they will have 150 guests or is it an estimate? You could make the extra sheetcake and if it's not used, freeze it for a future use (like Christmas).
