Cheesecake Problem Help!!!!!!!!!!!!!!!

I made 2 cheesecakes the other day. One came out perfect the other one came out of the oven okay but after it cooled off for a few minutes it cracked does anyone out there know why this may have happened. I'd really like to know so I could avoid this happening again. I made it for someone and was very embarassed to give it to him. It was a new york cheesecake. If anyone can help me out there I'd be truly grateful.

A cheesecake will crack for a few reasons...overmixed, a dry bake, overbaked, or it didn't release from the sides of the pan as it cooled.
As a precaution, I always make my cheesecakes following these rules:
-mix on low speed
-grease the pan
-always bake in a waterbath
-bake only until I get ther'just set jiggle' in the center
-run a very sharp knife around the egde of the pan as soon as it comes out of the oven
-cool for 10 min, then release- but don't remove -the springform ring

I hope thats helpful. Nothing is more frustrating than a cracked cheecake! If I do crack one, I make a small batch of cream cheese icing and spackle up the crack! A topping of some sort will cover it the patch job and who doesn't love a topping?!

Cheesecakes can crack due to a sudden change in temperature. When I make my cheesecakes I usually leave them in the oven (turned off) for several hours, with the oven door cracked open a few inches. Then I take it out of the oven and leave on the counter for another hour or so before putting it in the fridge.

In addition to SugarplumStudio's and MrsMissey's great suggestions, be sure to add the eggs one at a time and stop mixing as soon as they are incorporated. Overbeating the eggs adds lots of extra air in the cheesecake and will cause cracks.

It's interesting to me that you made two cheesecakes but only one cracked. Were they both the same kind of cheesecake? If so, did you mix them both together or separately? Is there something you can think you did differently with one that may have caused the cracks?
