I have not tried cherry, but I've used this recipe for both raspberry and strawberry. When I do strawberry I use the lesser amount of sugar. would probably do the same for cherries. Its a large recipe. When I make 1/4 the recipe its enough filling to fill a 8" round torted (3 layers of filling).

Hope this helps.
ETA: for cherry, a little amaretto added in would make it a little more sophisticated for a wedding cake.
Okay, so when I've made this filling for an 8" round torte, I had sold those cakes, not cutting into them myself. Today I was at the event where the cake was served and realized that I was a little skimpy with the filling. I would definately use a 1/2 recipe for an 8" round torte in the future. Just to give you a guideline...
I'm glad I could help.
