Do A Piping Gel Writing Technique?

I saw a Dale Earnhardt NASCAR cake with "the piping gel technique".
It looked so cool and I'd like to try it. Can someone explain how to do this? It looked like white below and red on top? Thanks!

I have done the writing like that in 2 colors before. I just wrote the bottom color with a little bit larger tip than the top one. You could use piping gel for the red in that pic or buttercream. Just use a smaller tip. Good luck!!
