id like to know this to cause i am using mine the same day...im actually working on a cake now and had to make some MMF. Ive been told takes like an hour to sit and if you color it the color will darken over time so i dunno...
I've used it the same day, even the same morning and have not had any problems. I'm sure the reason for letting it rest is the moisture is more evenly distributed if it's allowed to sit. But, if you're pressed for time and need to make another batch, use it. I'd let it sit for a little bit, but there's no chemical changes that take place so, roll and decorate.
