Help Me Price This Cake Please!!!

I can't entirely grasp the whole CakeBoss software right now and I need a quote for a cake. Also, this is the biggest cake I've done that has been paid for, so I need help.

3 tier (12", 10" and 8" rounds, off center) red velvet with buttercream, covered in lavender fondant with small dot detail.

According to the Wilton chart, this should feed about 118 people, and she asked for it to feed between 100-130.

well lets see if I can help you out a little.

I use a serving size of 1"x2"x4" so the following is how many servings I get out of a cake
12" - 52
10" - 38
8" - 20
Total - 110 servings

As for cost per slice I make my Red Velvet from a family recipe so this is considered a Specialty flavor and the fondant is taken into consideration on this price also. For red velvet I ALWAYS torte each layer of cake so I have a total of 3 layers of filling and 4 layers of cake. I just wanted to explain this all to you so you know what is included in my price. My pricing also includes delivery within a 7mile radius of the center of my town. (I can not have any pick-ups at my home b/c of my city, so I have figured this into my prices... but I deliver ALL cakes over two tiers... and all wedding cakes-I don't want someone else transporting and have something happen to it)

$3.75/serving

110x3.75 = $412.50

But if she is wanting something to feed anywhere from 100-130... well that is a 30 serving difference and a difference of $112.50 You will want to get a contract stating how many servings you are actually providing so there is no if's and's or but's and she knows what she is getting and you are getting paid for everything you are doing.

I charge $2.00 a serving for wedding cakes. so a cake that size for one of my customers would cost $236.00. Are they planning on keeping the top tier for the anniversary? if so you will need to increase the size of the bottom two to make the number of servings maybe a 14, 10 and 6 which would make 116 servings to feed guests and then you add the 12 servings for the 6 inch tier which makes 128 seevings for pricing which would be $256.00

3$ per serving for buttercream, 3.50$ per serving for fondant. I would probably charge her 3.50$ a serving anyways because red velvet is a specialty flavor even if it is covered in BC. So......118 x 3.5 is 413$ PLUS delivery/setup on top of that. Right around 500$ in total.

It's not a wedding cake, it's for a first anniversary party (which seems like a HUGE cake for an anniversary party, but I don't know if they had a reception when they got married or whatever, and it's NOMB anyway haha).

That's nothing... I just did the math and realized that I've been charging $1 (or less) per slice for every cake I make. But I'm afraid to charge more in case people don't want to pay it. icon_sad.gif

I would be happy to make your wedding cake and I would charge you $2.00 just like I do everyone else. Unfortunately you live in western Canada and I live in the southeast US.
I just love doing cakes and I am very fortunate that I don't have to depend on my income to help us live, my husband has a great job and great benefits. Our children are grown and married we have no grandchildren yet and I stay at home and play with cakes, most of my customers are church family.

Glad to help... I am not to far from you I am right along the mississippi river (sitting about 1 mile from it right now) about 15 miles south of I-80.

You also said that it isn't a wedding but an anniversary. I just wanted to say that I do not price my cakes any differently for a wedding or a party. It doesn't matter what the occasion is to me, i am still putting the same amount of time into the cake whether 20 people are eating for a birthday or 200 people are eating it with the president.

As for charging more... you are charging less than the grocery stores (even walmart, and walmart and the grocery stores you can't even compare with b/c they don't even do the same thing you are doing) You have higher opperating cost and you are making a specialty item not just quickly doing it for the money. Take pride in your work and charge what it is worth, and what YOU are worth!

Don't look at it as a cake for $500 look at it as a cake for 100 ppl (big difference)

Oh someone else just asked about the top tier for a wedding so I wanted to specify that it wasn't for a wedding cake icon_smile.gif

The girl did say that she had considered HyVee but their cakes didn't taste good and she would rather give her money to someone with a small business.

And ya know, I never thought about it as a cake for however many people.. I'm just so afraid someone will think I'm ridiculous for charging so much. icon_smile.gif

If you feel you do great work. People will pay. Especially if your cakes are yummy. Im like you I dont like to feel I am overcharging at the beginning, but when Im in the middle of doing the cake at 3 am my perspective changes icon_biggrin.gif

I didnt see the cake design, some of my pricing would include how much fluff is on the cake too. If its just a simple design then I dont charge as much.

For 130 people, I would say $400 is sufficient. Someone here somewhere said in one of the posts... try taking 130 people to a nice resturaunt and giving them cake for $2 each... ain't gonna happen icon_rolleyes.gif
