When you have a cake due on Saturday, when do you bake? When do you fill, crumbcoat, frost, cover in fondant? How many days start to finish do you take? In between which steps do you allow things to set-up?
I'm venturing back into the realm of cake after my disaster in July and I'm just trying to see what other people do.

Basic simple 3 tier cake: bake, ice and decorate on Thursday.
I'm doing a slightly larger one this weekend (my niece's wedding is tomorrow) so I baked and crumb coated on Thursday and spent about 3 hours today icing and decorating.
I don't do fondant so I can't help you with that one.
My friend, Kyleen (she's on here so maybe she'll find a second to chime in) said:
Day 1: bake, torte, fill, crumb coat
Day 2: frost and cover in fondant
Day 3: Decorate
She says that the breaks allow the cake to settle and mature.
Anyone have any feelings on this?

When I have a cake sue on Sat. I bake and fill on Thursday evening. Ice and decorate on Friday. And any last minute touch-ups I do on Sat morning. I have trouble sleeping Friday nights if I know I have to decorate a whole cake in a few hours on the day it's due. I like to leave myself a little room for error or disasters ![]()
For a Saturday cake, I bake and make icings and fillings Thursday night. I don't wait around at the bakery for them to cool, so I come in Friday evening to fill, ice, and decorate. I too can't sleep Friday night until all the cakes are completely finished.
