I had a request to make a carrot cake with pineapple, which I have never done and I also don't eat carrot cake..anyway I baked it last night and it does not have the consistency of regular cake..It almost seems like a banana nut bread, is this right? It is hard to explain..anyway, any advice or help would be appreciated..thanks icon_confused.gif

It sounds like you did it right. I wasn't really a carrot cake person either but it's my fil's fav so I've had to learn it's a different animal!

Yes it looks more like a nut bread. You can make cream cheese icing for this cake should be great.

i make a morning lory cake....the recipe is really a muffin recipe and i bake it in the cake pan...it has pineapple and a granny smith apple too...its quite good. the way i do it, its texture is like a cake too...if you want to know ...the recipe is from the muffin lady cook book.
