Stabilized Whipped Cream

Do you guys have any idea how long stabilized whipped cream last compaired to regular whipped cream.
I've never made the stabilized version but I think I need to as I have to put it on several pies tonight that wont be eaten until Thanksgiving and I dont want the whipped cream to weep and freak any of my customers out.

This is the recipe I use all the time. I forgot a practice cake in the fridge (how that happened I'll never know-lol) one time for 4-5 days and the icing still looked exactly the same as when it went in!

17 pies! wow that stabilized wc is going no where. it seemed the same at first but then it set up and got a little funky to pipe but I think it will outlast the pies. icon_twisted.gif

I just tried to make something like this today with less than ecstatic with the results icon_sad.gif.. tasted good though icon_wink.gif

Its in the recipe section if you search whipped cream...

Seems like the standard for everything I found online.
