Sugared Fruit?????

I have a question about sugared fruit.....it is my understanding the process is: Wash the fruit, let it air dry, brush on the egg white, roll in the raw sugar(not regular sugar, in my store there is a raw sugar that isn't white but no coarse sugar), let it air dry, apply to the cake within an hour(it can lay directly on the cake?).

Is this the process?

I use superfine/jelly sugar....much better grain size! I usually sugar the fruits or flowers the evening before the cake is due. The sugar is translucent until it is dry, then it's a lovely opaque. That takes about 5/6 hours usually?

I used to make sugared fruit or flowers for floral arrangements. I used good ol' regular granulated sugar after I brushed on the egg whites.

Thank you for the suggestions that I received about how to do sugared fruit. I have done a test run...I washed the fruit, let it air dry, brushed on the egg white, used "regular" sugar rolled it in and around and it worked great!

We just did a cake with sugared fruit last week at my part time job. We ended up dipping the fruit into hot sugar and then rolling it in sanding sugar. It came out really pretty.

The pastry chef decided to do it like this b/c he didn't think the egg white would stick to the waxy fruit that the bride had picked....
